Description

A rich and creamy Beef and Mushroom Stroganoff featuring tender strips of beef sirloin sautéed with mushrooms, onions, and garlic, simmered in a luscious sour cream and heavy cream sauce. Perfectly served over egg noodles, rice, or mashed potatoes, this classic comfort food dish offers a hearty and flavorful meal for four.

Ingredients

Scale

Beef and Sauce

  • 1 lb beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced (cremini or button mushrooms work best)
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • Salt and black pepper to taste

Garnish and Serving

  • 2 tbsp fresh parsley, chopped (for garnish)
  • Egg noodles, rice, or mashed potatoes (for serving)

Instructions

  1. Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  2. Sauté Onion and Mushrooms: In the same skillet, add diced onion and cook for 2-3 minutes until softened. Add sliced mushrooms and cook another 4-5 minutes until the mushrooms release moisture and turn golden brown.
  3. Add Garlic: Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Make the Roux: Sprinkle flour over the mushrooms and onions, stirring constantly. Cook for 1-2 minutes to remove the raw flour taste.
  5. Add Liquids and Seasonings: Slowly pour in beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring mixture to a simmer and cook for 5-6 minutes until sauce thickens slightly.
  6. Add Creams: Stir in sour cream and heavy cream. Cook for 2-3 minutes until sauce is smooth and creamy. Season with salt and black pepper to taste.
  7. Combine Beef and Sauce: Return cooked beef to the skillet and stir to coat with sauce. Cook 2-3 minutes until beef is heated through.
  8. Serve and Garnish: Serve stroganoff over egg noodles, rice, or mashed potatoes. Garnish with chopped fresh parsley and enjoy.

Notes

  • Use cremini or button mushrooms for best flavor and texture.
  • Do not overcook the beef to keep it tender.
  • Adjust seasoning with salt and pepper according to taste preferences.
  • This dish can be paired with mashed potatoes or rice for versatility.
  • To make it lighter, substitute sour cream with Greek yogurt.
