Yogurt Mixture
- 1 cup Greek yogurt (full-fat for creaminess)
- 1/2 tsp vanilla extract
- Extra honey or maple syrup to taste (optional)
Blueberry Compote
- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp water (to mix with cornstarch, if using)
Instructions
- Make the blueberry compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and break down slightly. If a thicker compote is desired, dissolve the cornstarch in 1 tablespoon of water and stir it into the simmering berries. Allow the compote to cool completely before using.
- Prepare the yogurt mixture: In a mixing bowl, stir together the Greek yogurt and vanilla extract until smooth and creamy. Taste the mixture and add extra honey or maple syrup if you prefer a sweeter flavor.
- Fill the molds with yogurt: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to leave room for the blueberry swirl.
- Add the blueberry swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Using a toothpick or skewer, gently swirl the compote into the yogurt to create a marbled and artistic effect.
- Freeze the bites: Transfer the molds to the freezer and freeze for at least 3 hours or until the bites are solid and fully set.
- Store and serve: Once frozen, pop the yogurt bites out of their molds and store them in an airtight container in the freezer. For the best texture, allow each bite to sit at room temperature for 2–3 minutes before eating.
