Description

These Cheesy BBQ Chicken Pizza Rolls are a delicious and fun twist on traditional pizza, combining tender BBQ chicken, gooey mozzarella cheese, and a flavorful homemade dough rolled into perfect bite-sized pieces. Ideal as a crowd-pleasing appetizer or a satisfying snack, these rolls are baked to golden perfection and served warm with extra BBQ sauce.

Ingredients

Scale

Dough

  • 2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet instant yeast (about 2 ¼ teaspoons)
  • ¾ cup warm water
  • 2 tablespoons olive oil

Filling

  • 1 cup BBQ sauce, plus more for serving
  • 2 cups cooked and shredded chicken
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup diced red onion (optional)

Instructions

  1. Prepare the Dough: In a large bowl, combine flour, sugar, salt, and instant yeast. Add warm water and olive oil, stirring until a dough forms.
  2. Knead the Dough: Knead the dough on a floured surface for about 5 minutes until smooth. Let the dough rest for 10 minutes to allow it to relax and rise slightly.
  3. Roll Out the Dough: Roll the dough into a 14×9 inch rectangle on a floured surface, creating an even layer for the filling.
  4. Add the Filling: Spread the BBQ sauce evenly over the dough, leaving a small border around the edges to seal the rolls properly.
  5. Distribute the Filling: Evenly spread the shredded chicken, mozzarella cheese, and diced red onion over the sauced dough.
  6. Roll and Cut: Starting from the long side, tightly roll the dough into a log shape ensuring the filling stays inside.
  7. Slice the Rolls: Cut the log into 12 equal pieces, each representing one pizza roll.
  8. Let the Rolls Rise: Place the rolls into a greased baking dish, cover them, and let rise for 30 minutes to achieve a light and fluffy texture.
  9. Bake: Preheat your oven to 375°F (190°C). Bake the pizza rolls for 25 minutes or until they are golden brown and cooked through.
  10. Serve: Serve the pizza rolls warm with extra BBQ sauce on the side for dipping.

Notes

  • Optional diced red onion adds a nice sharpness but can be omitted if preferred.
  • Use cooked chicken leftovers or rotisserie chicken for convenience.
  • Make sure the water is warm but not hot to properly activate the yeast.
  • Letting the rolls rise before baking ensures a soft and tender crumb.
  • Store leftovers in an airtight container and reheat in the oven or microwave.
