Mushroom Mixture

Sandwich Assembly
- 4 slices sourdough or rustic bread
- 4 slices provolone cheese
- 2 slices Swiss or cheddar cheese
- 1 tablespoon mayonnaise or softened butter (for spreading on bread)
Instructions
- Prepare the Mushroom Mixture: In a skillet over medium heat, melt the butter. Add the sliced mushrooms and onions and cook for 8–10 minutes, stirring occasionally, until they are soft and caramelized. Add the minced garlic and thyme, then cook for 1 additional minute. Season with salt and pepper to taste, then remove the skillet from heat.
- Assemble the Sandwiches: Lay out the bread slices and spread mayonnaise or softened butter on one side of each slice. On the unbuttered side of two slices, layer one slice of provolone cheese, followed by a generous spoonful of the mushroom mixture, then a slice of Swiss or cheddar cheese, and top with another slice of provolone cheese. Close each sandwich with the remaining bread slices, ensuring the buttered sides face outward.
- Grill the Sandwiches: Heat a clean skillet over medium heat. Place the sandwiches in the skillet and grill for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and all the cheese is fully melted.
- Serve: Remove the sandwiches from the skillet, slice if desired, and serve warm for a comforting meal.
