  1. Mix dry ingredients: In a large mixing bowl, whisk together the bread flour, salt, and ground cinnamon to combine the dry components evenly.
  2. Activate yeast: In a separate bowl, combine the warm water, instant yeast, and brown sugar. Let it sit for 5 minutes until the mixture becomes foamy, indicating the yeast is active.
  3. Form dough: Gradually add the wet yeast mixture to the dry ingredients, stirring until a rough dough forms.
  4. Knead dough: Turn the dough onto a floured surface and knead for 8–10 minutes until it becomes smooth and elastic, developing gluten structure essential for bagels.
  5. Add raisins: Knead in the raisins until they are evenly incorporated throughout the dough.
  6. First rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm spot for about 1 hour or until it has doubled in size.
