Description

These Crispy Peach Cobbler Egg Rolls offer a delightful twist on traditional peach cobbler, wrapped in a crispy egg roll wrapper and fried to golden perfection. Filled with a sweet, cinnamon-spiced peach mixture and drizzled with a light vanilla glaze, they make an irresistible summer dessert that’s both crunchy and luscious.

Ingredients

Scale

Peach Filling

  • 1 ½ cups peeled and diced fresh peaches (or canned peaches, drained)
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch

Egg Rolls

  • 8 egg roll wrappers
  • Vegetable oil for frying (about 2 inches depth)

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Prepare the Peach Filling: In a medium saucepan over medium heat, combine diced peaches, granulated sugar, brown sugar, cinnamon, and lemon juice. Cook for 5 to 7 minutes, stirring occasionally until peaches soften and release juices. Stir in cornstarch and cook for an additional 1 to 2 minutes until the mixture thickens. Remove from heat and allow to cool slightly.
  2. Assemble the Egg Rolls: Place one egg roll wrapper on a clean, flat surface with a corner pointing towards you. Spoon about 2 tablespoons of peach filling into the center of the wrapper. Fold the bottom corner over the filling, fold in the sides tightly, then roll up the wrapper firmly to enclose the filling. Seal the top corner with a dab of water to secure. Repeat this process with remaining wrappers and filling.
  3. Fry the Egg Rolls: Heat vegetable oil in a deep skillet or saucepan to 350°F (175°C), ensuring about 2 inches depth of oil. Fry the egg rolls in batches, cooking for 2 to 3 minutes on each side or until they achieve a golden-brown and crispy texture. Remove with a slotted spoon and drain on paper towels to remove excess oil.
  4. Prepare the Vanilla Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
  5. Serve: Drizzle the vanilla glaze over the warm egg rolls and serve immediately for the best taste and texture.

Notes

  • You can substitute peaches with nectarines or frozen peaches that have been thawed and drained.
  • For added texture, consider sprinkling chopped pecans or oats into the peach filling before assembling.
  • Serve the egg rolls warm with a scoop of vanilla ice cream for an indulgent dessert experience.
