Description

These Easter Rice Krispie Treats are a festive twist on the classic no-bake snack. Featuring gooey marshmallows, crispy rice cereal, colorful sprinkles, and adorable Peeps candies arranged on top, they make a perfect sweet treat for spring celebrations and Easter gatherings.

Ingredients

Scale

Base Ingredients

  • 3/4 cup butter
  • 11 cups mini marshmallows (about two 10-ounce bags)
  • 1 tsp vanilla extract
  • 9 cups crispy rice cereal

Toppings

  • Sprinkles (to taste)
  • Peeps (marshmallow candies, amount as preferred for topping)

Instructions

  1. Melt Butter and Marshmallows: In a large microwave-safe bowl, combine the butter and mini marshmallows. Microwave on HIGH for 3 minutes, stirring after 2 minutes. Continue stirring until the mixture is completely smooth and well blended.
  2. Add Vanilla: Stir in the vanilla extract thoroughly until it is fully incorporated into the melted marshmallow mixture.
  3. Combine with Cereal: Add the crispy rice cereal to the marshmallow mixture. Use a spatula to stir gently but completely so that all the cereal pieces are fully coated with the marshmallow mixture.
  4. Press into Pan: Lightly grease a 13×9 inch baking pan with cooking spray. Using a buttered spatula or wooden spoon, evenly press the coated rice cereal mixture into the pan to form a flat and firm layer.
  5. Add Toppings: While the treats are still warm, sprinkle colorful sprinkles on top, then arrange Peeps marshmallow candies spaced out on the surface, roughly sizing portions as desired.
  6. Cool and Serve: Allow the treats to cool completely at room temperature so they set properly. Once cooled, cut into squares and serve immediately or store for later enjoyment.

Notes

  • Use a buttered spatula or wooden spoon to prevent sticking while pressing the mixture into the pan.
  • Arrange Peeps a few inches apart to define serving sizes and to keep the candies intact when cutting.
  • For easier cutting, let the treats cool completely before slicing into squares.
  • Store leftovers in an airtight container at room temperature for up to 2 days for best freshness.
  • You can customize the toppings with other Easter-themed candies or colored sprinkles to suit your preference.
