- 1 tablespoon oregano

- 2 tablespoons light soy sauce
- 1 teaspoon sugar
Instructions
- Prepare Cheese: Shred both the sharp cheddar and mozzarella cheese and set aside on a plate for later use.
- Cook Beef: Heat a pan over medium heat with a small amount of oil. Add the diced onions and minced garlic, sauté for about 30 seconds until aromatic, then add the ground beef. Break the beef into smaller pieces and cook until it’s halfway done.
- Season Beef: Add all the seasonings—cumin, oregano, paprika, chili powder, onion powder, and garlic powder—to the beef mixture except for the soy sauce and sugar. Stir well to evenly distribute the spices. Continue cooking until the beef is fully cooked.
- Add Soy Sauce and Sugar: Once the beef is cooked through, incorporate the light soy sauce and sugar into the pan, stirring to combine and enhance flavor.
- Drain Excess Grease (Optional): Push the cooked beef to one side of the pan and tilt it to collect the grease. Carefully discard the grease or absorb it with paper towels to reduce fat content.
- Melt Cheese: Lower the heat to medium-low. Evenly sprinkle the shredded cheeses over the cooked beef in the pan. Cover the pan with a lid and allow the cheese to melt for a few minutes until gooey.
- Assemble Nachos: Arrange a layer of tortilla chips on a serving plate. Spoon the cheesy beef mixture evenly over the chips. Garnish with pickled jalapeños and fresh cilantro to finish.
