Description

A light and refreshing Fluffy Pistachio Pudding & Pineapple Delight made with instant pistachio pudding, crushed pineapple, mini marshmallows, chopped pecans, and Cool Whip. This no-bake dessert salad is quick to prepare and perfect for gatherings or a sweet treat served chilled.

Ingredients

Scale

Pudding Mixture

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple, undrained

Add-ins

  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans

Topping

  • 1 (8 oz) container Cool Whip, thawed

Instructions

  1. Combine pudding mix and pineapple: In a large mixing bowl, combine the instant pistachio pudding mix with the entire can of crushed pineapple including the juice. Stir thoroughly until the pudding mix dissolves completely and the mixture becomes creamy.
  2. Fold in marshmallows and pecans: Gently fold the mini marshmallows and chopped pecans into the pudding mixture, mixing evenly without deflating the fluffiness of the pudding.
  3. Incorporate Cool Whip: Fold in the thawed Cool Whip carefully until fully incorporated, resulting in a smooth and fluffy salad consistency.
  4. Chill before serving: Cover the salad and refrigerate for at least 1 hour to allow flavors to meld and the pudding to set. Garnish with extra chopped pecans or a sprinkle of coconut if desired. Serve chilled for best taste.

Notes

  • Ensure the Cool Whip is fully thawed before folding to incorporate smoothly.
  • For added texture, garnish with shredded coconut or extra chopped pecans.
  • This pudding salad is best served chilled and consumed within 2 days for optimal freshness.
  • You can substitute pecans with walnuts or almonds if preferred.
  • Do not overmix after adding Cool Whip to maintain the fluffy texture.
