Brownie Layer

  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Cookie Layer

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips


Instructions

  1. Preheat and prepare the pan. Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper to ensure easy removal of the brookies after baking.
  2. Make the brownie layer. In a bowl, whisk together the melted butter and granulated sugar until combined. Add the eggs and vanilla extract, whisking until smooth. Gently fold in the cocoa powder, flour, salt, and baking powder until just combined. Spread the brownie batter evenly in the prepared baking pan.
  3. Prepare the cookie layer. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Mix in the flour, baking soda, and salt until a dough forms. Fold in the chocolate chips evenly.
  4. Assemble the brookies. Drop spoonfuls of the cookie dough over the brownie layer in the pan. Gently spread and smooth the cookie dough to cover the brownie batter as evenly as possible.
  5. Bake the brookies. Place the pan in the preheated oven and bake for 30–35 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs.

Notes
