Salmon Marinade

  • 1 pound skinless salmon fillet, cut into 1½-inch cubes

  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Vegetables and Garnish

  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced into thick rounds

Instructions

  1. Prepare the Marinade and Salmon: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and black pepper until well combined. Add the salmon cubes to the marinade and gently toss to coat them evenly. Cover the bowl with plastic wrap and refrigerate for 20 to 30 minutes to allow the flavors to meld.
  2. Soak the Skewers: If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.
  3. Preheat the Grill: Heat your grill or grill pan over medium-high heat to prepare for cooking the kabobs.
  4. Assemble the Kabobs: Thread the marinated salmon cubes onto the skewers, alternating them with chunks of red bell pepper, zucchini rounds, and red onion wedges to create colorful kebabs.
