Ingredients
Scale
Salmon
- 4 salmon fillets
- 2 tbsp olive oil
- Salt and pepper to taste
Sauce and Vegetables
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup mushrooms, sliced
- 3 cups fresh spinach
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tsp lemon juice
- Fresh parsley (optional, for garnish)
Instructions
- Cook the salmon: Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Cook salmon for 4-5 minutes on each side until golden brown and cooked through. Remove salmon from skillet and set aside.
- Sauté garlic: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Cook mushrooms: Add the sliced mushrooms to the skillet and cook for 3-4 minutes until they soften and release their moisture.
- Wilt spinach: Stir in the fresh spinach and cook for 2-3 minutes until wilted and tender.
- Make the creamy sauce: Pour in the heavy cream, then add the grated Parmesan cheese and lemon juice. Stir well to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
- Combine salmon and sauce: Return the cooked salmon fillets to the skillet, spooning the creamy sauce over the top of each piece.
- Heat through: Cook for an additional 2-3 minutes until the salmon is heated through and coated in the sauce.
- Garnish and serve: Sprinkle with fresh parsley if desired, then serve immediately for a delicious, creamy garlic butter salmon meal.
Notes
- You can substitute heavy cream with half-and-half for a lighter sauce, but the texture will be less rich.
- Use fresh Parmesan cheese for the best flavor and texture in the sauce.
- Make sure not to overcook the salmon to keep it tender and moist.
- Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
- Fresh lemon juice brightens the dish, but adjust amount to taste.
