Instructions
- Cook the sweet potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften and brown slightly.
- Cook the turkey: Push the sweet potatoes to one side of the skillet. Add the ground turkey to the empty side. Break it apart with a spoon and cook for 5-7 minutes, until browned and fully cooked through.
- Sauté the vegetables: Add the diced onion, minced garlic, and red bell pepper to the skillet alongside the turkey. Cook for 3-4 minutes, until the vegetables are softened and fragrant.
- Season: Sprinkle smoked paprika, cumin, dried oregano, salt, and pepper over the turkey and sweet potatoes. Stir everything to combine and cook for another 2-3 minutes, allowing the spices to fully incorporate their flavors.
- Add spinach (optional): If desired, stir in the baby spinach and cook for an additional minute, just until it wilts.
- Serve: Remove the skillet from heat. Garnish with chopped fresh cilantro and a squeeze of fresh lime juice if you like. Serve immediately as a nutritious and flavorful main dish.
