Ingredients
Scale
Bagel & Spread
- 1 bagel, sliced and toasted
- 1/2 avocado
Halloumi & Toppings
- 4 slices of halloumi cheese
- Cherry tomatoes, halved (about 6-8)
- Fresh herbs such as basil or parsley, finely sliced (1-2 tbsp)
- Honey, for drizzling (about 1 tablespoon)
- Salt and pepper, to taste
Instructions
- Cook the Halloumi: Heat a non-stick pan over medium heat to prepare for frying the halloumi slices.
- Fry Halloumi: Place 4 slices of halloumi cheese in the hot pan, cooking each side for about 3 minutes until they turn golden brown and slightly crispy.
- Toast the Bagel: While the halloumi cooks, toast the bagel halves until they are lightly browned and crisp.
- Mash Avocado: Using a fork, mash 1/2 an avocado in a small bowl until smooth but still a bit chunky for texture.
- Prepare Toppings: Halve the cherry tomatoes and finely slice the fresh herbs to garnish the bagel.
- Assemble the Bagel: Spread the mashed avocado evenly on both toasted bagel halves to form a creamy base.
- Add Halloumi: Layer the golden fried halloumi slices over the avocado spread on the bagel bottom half.
- Top with Tomatoes and Herbs: Scatter halved cherry tomatoes and sprinkle sliced fresh herbs over the halloumi for freshness.
- Season and Drizzle Honey: Lightly season with salt and pepper to taste, then drizzle generous amounts of honey on top to add a sweet contrast.
- Serve: Place the top bagel half on the assembled bottom half and serve immediately while warm and fresh.
Notes
- Use ripe avocado for best flavor and easier mashing.
- Halloumi can be substituted with another firm grilling cheese if unavailable.
- Adjust the honey amount according to how sweet you prefer your bagel.
- Fresh herbs like basil or parsley add a nice aromatic touch but can be omitted or substituted as desired.
- This recipe pairs well with a side of fresh greens or a light salad for a complete meal.
