Ingredients
Scale
Sausage Mixture
- 1 lb spicy breakfast sausage
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 8 oz cream cheese, softened
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
Dough and Garnish
- 1 can (16 oz) refrigerated biscuit dough (8-count)
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly grease a muffin tin to prevent sticking.
- Cook Sausage: In a skillet over medium heat, cook the spicy breakfast sausage until fully browned. Use a spatula to break apart the meat as it cooks. Once done, drain any excess grease to keep the bites from becoming too oily.
- Combine Ingredients: Add the drained Rotel diced tomatoes with green chilies and softened cream cheese to the browned sausage in the skillet. Stir continuously until the cream cheese melts and the mixture is well combined. Season with garlic powder, onion powder, and smoked paprika if using. Allow the mixture to cool slightly before assembling.
- Prepare Dough: Separate the refrigerated biscuit dough into individual biscuits. Cut each biscuit in half so you have 16 pieces in total. Flatten each piece into approximately a 3-inch circle using your hands or a rolling pin.
- Fill and Seal: Spoon about 1 tablespoon of the sausage and cheese mixture into the center of each flattened dough circle. Carefully fold the edges up towards the center and pinch tightly to seal each one into a ball, ensuring that no filling escapes during baking.
- Arrange for Baking: Place each sealed dough ball seam-side down on the prepared baking sheet or place them into the greased cups of the muffin tin for a uniform shape.
- Bake: Place the baking sheet or muffin tin in the preheated oven and bake for 12 to 15 minutes, or until the bites are puffed up and golden brown on top.
- Garnish and Serve: Remove the bites from the oven and let them cool slightly. Sprinkle with chopped parsley for a fresh, vibrant garnish and serve them warm for the best flavor and texture.
