- 8 flour tortillas (2 tortillas per quesadilla)
- 1 1/2 cups shredded cheese (cheddar, marble, or your choice)

- Prepare the Tortillas: Stack two tortillas together and cut out a small “pumpkin stem” from the top of both tortillas.
- Cut Out Jack-o-Lantern Face: Set one tortilla aside. On the other tortilla, use a small knife to cut out a jack-o-lantern face. You can freehand the face or use a toothpick to lightly outline it before cutting.
- Assemble the Quesadillas: Take the tortilla without the face and spread the shredded cheese evenly over it. If you’re adding other ingredients like refried beans or chicken, spread them on before the cheese.
- Top with Face Tortilla: Place the tortilla with the jack-o-lantern face cut out on top, aligning it with the cheese-covered tortilla.
- Cook the Quesadillas: Heat a non-stick skillet or griddle over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
- Serve: Remove from the pan, cut into wedges, and enjoy! These quesadillas are delicious served with salsa, sour cream, and guacamole.
