Ingredients
Scale
Fish
- 4 cod fillets (about 6 ounces each)
Seasoning & Marinade
- 2 lemons, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Garnish
- Fresh parsley, for garnish
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the cod perfectly.
- Prepare the seasoning mixture: In a small bowl, combine the olive oil, dried oregano, dried thyme, garlic powder, red pepper flakes if using, and salt and pepper. Mix well to create a flavorful herb marinade.
- Season the cod fillets: Place the cod fillets on a baking sheet lined with parchment paper or lightly greased. Brush each fillet generously with the herb and olive oil mixture to evenly coat them.
- Add lemon slices: Lay thin slices of lemon over and around the fillets. The lemon will infuse the fish with bright citrus aroma as it bakes.
- Bake the cod: Place the baking sheet in the preheated oven and bake the cod for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish and serve: Remove the cod from the oven and sprinkle with freshly chopped parsley. Serve immediately with your favorite side dishes.
Notes
- For best results, use fresh cod fillets that are evenly sized to ensure even cooking.
- If fresh herbs are available, they can be used instead of dried for a brighter flavor.
- Adjust the red pepper flakes to your desired spice level or omit to keep it mild.
- Serve with steamed vegetables, rice, or a fresh salad for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
