  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 1–2 tbsp fresh lemon juice (to taste)

Instructions

  1. Roast the Cauliflower: Preheat your oven to 425°F (220°C). Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25–30 minutes, or until the cauliflower is golden and tender.
  2. Sauté Aromatics: While the cauliflower roasts, heat the remaining tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add Spices and Simmer: Stir in ground cumin, turmeric, smoked paprika, and ground coriander. Cook the spices for 30 seconds to release their aromas. Add the roasted cauliflower and pour in the broth. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes for flavors to meld.
  4. Blend the Soup: Using an immersion blender, carefully purée the soup in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy and smooth.
  5. Finish and Serve: Stir in the coconut milk or heavy cream and fresh lemon juice. Taste and adjust seasoning with salt and black pepper as needed. Warm the soup through, then garnish with fresh parsley, dill, or cilantro before serving.
