Description

Delicious and easy no-bake cookies made with rich cocoa, creamy peanut butter, and oats. Ready in just 15 minutes, these classic treats don’t require an oven and set perfectly for a quick and satisfying snack.

Ingredients

Scale

Dry Ingredients

  • 2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 cups quick-cooking oats

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup milk
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract

Instructions

  1. Melt Butter and Combine Ingredients: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, stir in granulated sugar, milk, and unsweetened cocoa powder, mixing thoroughly to combine all ingredients evenly.
  2. Boil Mixture: Bring the mixture to a boil while stirring constantly to prevent burning. Allow it to boil gently for 1 full minute to ensure the sugar dissolves completely and the flavors meld.
  3. Add Peanut Butter and Vanilla: Remove the saucepan from heat. Immediately stir in the creamy peanut butter and vanilla extract until the mixture is smooth and homogeneous.
  4. Mix in Oats: Add the quick-cooking oats to the chocolate mixture. Stir well until all oats are evenly coated with the chocolate-peanut butter mixture.
  5. Form Cookies and Set: Drop spoonfuls of the mixture onto wax paper or a silicone mat, spacing them apart to prevent sticking. Let the cookies cool and set at room temperature for about 30 minutes until firm.

Notes

  • Use quick-cooking oats for best texture and quicker setting. Regular oats can be used but may result in a chewier cookie.
  • Ensure to boil the mixture for the full minute to help cookies set properly.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Allow cookies to cool completely before stacking to avoid sticking together.
