Ingredients
Scale
Dry Ingredients
- 2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 cups quick-cooking oats
Wet Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Instructions
- Melt Butter and Combine Ingredients: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, stir in granulated sugar, milk, and unsweetened cocoa powder, mixing thoroughly to combine all ingredients evenly.
- Boil Mixture: Bring the mixture to a boil while stirring constantly to prevent burning. Allow it to boil gently for 1 full minute to ensure the sugar dissolves completely and the flavors meld.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat. Immediately stir in the creamy peanut butter and vanilla extract until the mixture is smooth and homogeneous.
- Mix in Oats: Add the quick-cooking oats to the chocolate mixture. Stir well until all oats are evenly coated with the chocolate-peanut butter mixture.
- Form Cookies and Set: Drop spoonfuls of the mixture onto wax paper or a silicone mat, spacing them apart to prevent sticking. Let the cookies cool and set at room temperature for about 30 minutes until firm.
Notes
- Use quick-cooking oats for best texture and quicker setting. Regular oats can be used but may result in a chewier cookie.
- Ensure to boil the mixture for the full minute to help cookies set properly.
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Store cookies in an airtight container at room temperature for up to 5 days.
- Allow cookies to cool completely before stacking to avoid sticking together.
