Scale
Main Ingredients
- 1 stick butter (½ cup)
- 1 cup milk
- ¾ cup all-purpose flour
- 4 eggs
- ½–1 tablespoon sugar (optional)
- Sugar for sprinkling
For Serving (Optional)
- Honey
- Whipped cream
- Fruit
Instructions
- Preheat oven and prepare pan: Preheat your oven to 375°F (190°C). Thoroughly grease a muffin pan to prevent sticking and help the puffs bake evenly.
- Melt butter and heat milk: In a saucepan over low heat, melt the butter, then add the milk and bring the mixture to a low boil, ensuring it heats evenly without scorching.
- Add flour and form dough: Add the entire amount of flour at once to the hot milk and butter mixture. Stir vigorously with a spoon until the dough forms a smooth ball and pulls away from the sides of the pan.
- Cool the dough: Remove the pan from heat, and let the dough cool for about 5 minutes to prevent cooking the eggs when added.
- Incorporate eggs: Add eggs one at a time to the dough, mixing thoroughly after each addition until the batter is smooth and homogeneous.
- Fill muffin cups: Spoon or scoop the dough evenly into the prepared muffin cups. Optionally sprinkle sugar over the tops for a sweet crust.
- Bake the puffs: Place the muffin pan in the preheated oven and bake for about 30 minutes, or until the puffs are golden brown and have risen beautifully.
- Serve warm: Remove from oven and serve the Nun’s Puffs warm. Drizzle with honey or top with whipped cream and fresh fruit as desired for added flavor.
Notes
- Be sure the dough cools slightly before adding eggs to avoid cooking them prematurely.
- Sprinkling sugar on top before baking is optional but adds a pleasant crunch and sweetness.
- Serve immediately for the best texture; Nun’s Puffs tend to deflate upon cooling.
- Variations can include adding lemon zest or vanilla extract to the dough for extra flavor.
