Description

Crispy on the outside and tender on the inside, these Parmesan Baked Potatoes are a delicious twist on a classic side dish. Tossed with garlic, thyme, and Parmesan, they offer a flavorful, cheesy crust that’s perfect for any meal.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes, scrubbed and cut into wedges

Seasoning & Topping

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or rosemary)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to ensure it’s hot enough to crisp the potatoes perfectly.
  2. Prepare the Potatoes: After scrubbing and cutting your russet potatoes into wedges, place them in a large bowl.
  3. Season the Potatoes: Drizzle the olive oil over the potato wedges. Sprinkle garlic powder, dried thyme (or rosemary), salt, and black pepper evenly. Toss everything together so the potatoes are well coated with the seasoning and oil.
  4. Add the Parmesan Cheese: Sprinkle grated Parmesan cheese over the seasoned potatoes and toss gently to distribute the cheese evenly.
  5. Bake the Potatoes: Arrange the potato wedges in a single layer on a baking sheet lined with parchment paper or lightly greased to prevent sticking. Bake for 35-40 minutes, flipping once halfway through, until the potatoes are golden brown and crispy on the outside and tender inside.
  6. Garnish and Serve: Once baked, remove the potatoes from the oven and sprinkle chopped fresh parsley on top for a burst of color and fresh flavor. Serve hot as a perfect side dish.

Notes

  • For extra crispiness, soak potato wedges in cold water for 30 minutes before seasoning and baking to remove excess starch.
  • Feel free to substitute dried rosemary for thyme based on your preference.
  • Freshly grated Parmesan provides better texture and flavor than pre-grated options.
  • To make this dish vegan, omit Parmesan or substitute with a vegan cheese alternative.
  • Serve with sour cream or your favorite dipping sauce for added flavor.
