Wet Ingredients

  • 1/2 cup milk
  • 1/2 cup butter
  • 1/2 cup canned pumpkin
  • 1 tsp vanilla extract


Instructions

  1. Combine Wet Ingredients: In a medium saucepan, combine the sugar, milk, butter, and canned pumpkin. Stir constantly over medium heat and bring the mixture to a boil to dissolve the sugar and blend the ingredients smoothly.
  2. Cook to Soft Ball Stage: Once boiling, continue cooking the mixture for about 10 minutes while stirring, or until it reaches the soft ball stage around 235°F. You can test this by dropping a small amount of the mixture into cold water; it should form a soft, pliable ball.
  3. Mix in Dry Ingredients: Remove the saucepan from heat and immediately stir in the quick-cooking oats, cinnamon, nutmeg, allspice, salt, optional walnuts, and vanilla extract. Mix thoroughly until all ingredients are well combined and evenly distributed.
  4. Form Cookies and Cool: Drop the cookie mixture by spoonfuls onto a sheet of waxed paper. Leave space between each cookie to allow them to set properly. Let them cool at room temperature until firm and ready to enjoy.
