Description

Taco Potatoes combine hearty baked Russet potatoes with seasoned ground beef and classic taco toppings, creating a flavorful and satisfying meal that merges the comfort of baked potatoes with the zest of Mexican-inspired flavors.

Ingredients

Scale

Potatoes

  • 4 to 6 medium Russet potatoes

Ground Beef

  • 1 lb lean ground beef
  • 1 (1 oz) packet taco seasoning
  • Water as directed on seasoning packet

Toppings

  • Shredded lettuce
  • Cheddar cheese, shredded
  • Sour cream
  • Salsa
  • Guacamole
  • Green onions, chopped

Instructions

  1. Bake the Potatoes: Preheat your oven to 400°F (200°C). Wash and dry the Russet potatoes thoroughly. Use a fork to poke a few holes in each potato to allow steam to escape during baking. Wrap each potato individually in aluminum foil. Place them on a baking sheet and bake for about 1 hour until tender when pierced with a fork. Carefully remove from the oven and allow to cool slightly.
  2. Prepare Taco Beef: While the potatoes are baking, heat a large skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon until fully browned. Drain excess grease. Sprinkle the taco seasoning over the cooked beef and add the amount of water recommended on the seasoning packet. Stir to combine, bring to a boil, then reduce the heat to low and let it simmer for about 10 minutes until the sauce thickens and flavors meld.
  3. Assemble Taco Potatoes: Carefully unwrap each baked potato and cut a lengthwise slit across the top. Gently fluff the inside with a fork if desired. Spoon a generous portion of the seasoned ground beef into the opening. Top with your favorite taco toppings such as shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and chopped green onions for fresh flavor and texture.
  4. Serve: Serve the loaded taco potatoes warm as a hearty and delicious twist on traditional tacos that are perfect for a satisfying dinner or casual meal.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • To save time, potatoes can be microwaved before finishing in the oven for crispier skin.
  • Adjust toppings according to personal preference or dietary needs.
  • For extra flavor, add jalapeños or hot sauce as desired.
  • Leftover taco beef can be refrigerated for up to 3 days and used in other dishes.
