Cream Cheese Mixture
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 packet taco seasoning (about 2 tbsp)
- 1 can diced green chiles (4 oz)
Toppings
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 to 2 jalapeños, thinly sliced (optional)
- 1/4 cup sliced black olives (optional)
- 2 tbsp fresh cilantro, chopped
For Serving
- Tortilla chips
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
- Make Cream Cheese Mixture: In a mixing bowl, beat together the softened cream cheese, sour cream, and taco seasoning until you achieve a smooth consistency. Then stir in the diced green chiles evenly.
- Layer Refried Beans: Spread the refried beans evenly across the bottom of the prepared baking dish as the base layer.
- Add Cream Cheese Layer: Spoon and spread the cream cheese mixture evenly over the layer of refried beans, smoothing the top with a spatula.
- Top with Cheese and Extras: Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the cream cheese layer. Add thinly sliced jalapeños and sliced black olives on top if using for added flavor and texture.
- Bake the Dip: Place the baking dish in the oven and bake for 25 to 30 minutes, until the cheese is fully melted and the edges are bubbly and slightly golden.
- Rest and Garnish: Remove from the oven and let the dip rest for 5 minutes. Sprinkle freshly chopped cilantro on top before serving warm alongside tortilla chips.
Notes
- You can adjust the number of jalapeños based on your preferred spice level or omit if you want a milder dip.
- For an extra kick, consider adding a dash of hot sauce to the cream cheese mixture.
- This dip can be prepared a day ahead and baked just before serving to save time.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven.
