  • 1 (10-ounce) can ROTEL diced tomatoes & green chilies, well drained

Wonton Cups

  • 36 wonton wrappers
  • Cooking spray (such as PAM® Spray Pump Avocado Oil)
  • 2 cups shredded cheddar cheese (regular or reduced fat)

Toppings

  • 1 cup fresh tomatoes (Roma or grape), diced
  • 1 cup sour cream (regular or reduced fat)
  • 2 green onions, thinly sliced
  • 18 medium-sized black olives
  • Optional: Lime wedges for garnish


Instructions

  1. Preheat the Oven: Adjust the oven rack to the middle position and preheat the oven to 400°F (200°C). This ensures even cooking and crispness of the wonton cups.
  2. Cook the Meat: In a cast-iron pan over medium heat, heat the avocado oil and add the ground beef. Sprinkle the taco seasoning evenly over the meat and cook, breaking it apart with a spoon until browned and fully cooked. Remove from heat, and stir in the well-drained ROTEL diced tomatoes and green chilies until combined.
  3. Prepare the Wonton Cups: Spray two muffin pans with cooking spray. Place one wonton wrapper into each of 18 muffin wells to form the base. Spoon about one tablespoon of the meat mixture into each wonton wrapper, then top with approximately two teaspoons of shredded cheddar cheese. Place a second wonton wrapper on top, offset slightly, then add another layer of meat and cheese.
  4. Bake: Place the muffin pans in the preheated oven and bake for approximately 8 minutes. Watch closely, ensuring that the wonton wrappers turn golden brown and the cheese melts completely without burning.
